Diced Beets

Ingredients

  • 1 Del Monte can 398 ml Diced beets, drained
  • 200 g de feta
  • 83 ml (1/3 cup) greek yogurt
  • 15 ml (1 tbsp) olive oil
  • 30 ml (2 tbsp) lemon juice
  • Salt and pepper, to taste
  • 1,25 ml (1/4 tsp) ground Coriander
  • 1/2 Granny Smith apple
  • 63 ml (1/4 cup) pecans
  • 5 ml (1 tsp) chopped chives

Preparation

  1. Drain the beets. Reserve 1/3 cup diced beets for decoration.
  2. Blend the remaining beets, feta, Greek yogurt, olive oil and lemon juice until completely smooth.
  3. Season with coriander and salt/pepper to taste. Pour into a serving bowl.
  4. Cut the apple into small cubes and chop the pecans. Mix the apple, pecans, chives and remaining diced beets then place on top of the bowl.
  5. Serve with crudités, apple wedges, grilled pitas or crackers of your choice.
