Triple chocolate and pear cake – inspired by the Matilda movie

Pear Halves in 100% fruit juice from concentrate

Ingredients

Cake

500 ml (2 cups) unbleached all purpose flour

125 ml (1/2 cup) cocoa powder, packed

15 ml (1 tbsp) baking powder

5 ml (1 tsp) baking soda

1 pinch of salt

1 Del Monte can 398 ml pear halves, crushed

187.5 ml (3/4 cup) plant-based vanilla drink

125 ml (1/2 cup) white sugar

125 ml (1/2 cup) canola oil

15 ml (1 tbsp) apple cider vinegar

10 ml (2 tsp) vanilla extract

83.3 ml (1/3 cup) mini dark chocolate chips


Icing

1 Del Monte can 398 ml pear halves, crushed

30 ml (2 tbsp) plant-based margarine

5 ml (1 tsp) vanilla extract

375 ml (1 1/2 cup) icing sugar, sifted

83.3 ml (1/3 cup) cocoa powder, sifted


Decoration

4 Del Monte pear halves, sliced

Preparation

1. Preheat oven to 350°F. Oil two 20 cm (8 in) diameter springform pans and line the base of the molds with parchment paper.
 

2. In a bowl, mix the flour, cocoa powder, baking powder, baking soda and salt.
 

3. In a large bowl, using a whisk, mix the pear puree, plant-based drink, sugar, oil, vinegar and vanilla. Gradually add the dry ingredients while whisking continuously. Add the chocolate chips and mix.
 

4. Divide the batter into the molds and bake for 35 minutes or until a toothpick inserted in the center of the cake comes out clean. Leave to cool for 10 minutes before unmolding. Let cool completely on a cooking grid. 
 

5. Meanwhile, in a bowl, mix the pear puree, plant-based margarine and vanilla extract for the icing. Using a whisk, gradually add the icing sugar and cocoa powder and mix until you obtain a smooth, homogeneous icing.
 

6. Cover a surface with icing before layering the cakes and covering with the remaining icing. Decorate with the pears.
