Soft bread with pears, yogurt and double chocolate

To make the return of the lunch box more pleasant, what could be better than a delicious ultra-moist bread with pears, yogurt and double chocolate? With its chocolatey and fruity taste thanks to the juicy Del Monte pears, it will please everyone (young and old alike!). It's a great nutritious and filling snack for school or the office. It will provide you with the energy you need to gently face the return to routine and the start of the school year.

Pear Halves in 100% fruit juice from concentrate

Ingredients

Dry

250 ml (1 cup) all purpose flour

250 ml (1 cup) whole wheat flour

187,5 ml (3/4 cup) quick cooking oats

83 ml (1/3 cup) cocoa powder

5 ml (1 tsp) baking powder

5 ml (1 tsp) baking soda

1 pinch of salt


Wet

2 eggs

83 ml (1/3 cup) brown sugar (or sugar)

250 ml (1 cup) plain (or vanilla) yogurt

125 ml (1/2 cup) milk (of choice)

83 ml (1/3 cup) canola oil

5 ml (1 tsp) vanilla extract

1 Del Monte can 398 ml pear halves in 100% fruit juice from concentrate, drained and cut into cubes

125 ml (1/2 cup) chocolate chips

A few chocolate chips, to garnish (optional)

Preparation

1. Preheat the oven to 350˚F. In a bowl, combine the dry ingredients.

2. In a second bowl, whisk the eggs with the brown sugar until a creamy texture is obtained. Add the rest of the wet ingredients and mix. 

3. Pour the dry ingredients into the wet ingredients and mix with a fork. Add the pear cubes and chocolate chips and mix lightly.

4. Transfer the mixture to a greased or parchment paper lined loaf pan. If desired, garnish with a few chocolate chips. Bake for 1 hour or until a toothpick inserted in the center of the dough comes out clean.
