Corn and jalapeno salsa
1 can whole kernel corn OR Del Monte Southwest, Mexican or Mediterranean corn medley
1 c (250 ml) tomatoes, chopped
1 jalapeno, seeded and finely chopped
1 tbsp (15 ml) lime juice
1/2 tsp (2 ml) ground cumin
1/4 c (60 ml) fresh cilantro, chopped
Salt and freshly ground pepper
In a bowl, mix together all ingredients and serve with corn chips, crackers or oven-baked pita chips.
Salsa is an excellent side for steak, chicken, pork chops, fish, shrimp or scallops.
For a little kick, add salsa to salad, burgers or tacos.
