
Southwest-style vegetable and quinoa patties in an air fryer
For a meal idea approved by babies and parents, ready in less than 30 minutes, try this tasty Southwest-style vegetable and quinoa patties vegetarian recipe prepared in the air fryer. They can be enjoyed as a snack, lunch or quick dinner as is or served with lime yogurt to add even more flavor, or the sauce of your choice. You can also make a wrap version! A delight for the whole family!
Ingredients
- 1 Del Monte can 398 ml Corn medley Southwest style, drained
- 250 ml (1 cup) cooked quinoa
- 250 ml (1 cup) all purpose flour
- 180 ml (¾ cup) breadcrumbs (Check notes)
- 1 French shallot
- 2 cloves of garlic, chopped
- 15 ml (1 tbsp) Dijon mustard
- 15 ml (1 tbsp) lime juice
- 7,5 ml (½ tbsp) soy sauce
- 60 ml (¼ cup) baking powder
- 5 ml (1 tsp) cumin
- 5 ml (1 tsp) paprika
- 5 ml (1 tsp) ground coriander
- 5 ml (1 tsp) thyme
- 5 ml (1 tsp) onion powder
- Pepper, to taste

Preparation
- In a food processor, mix all the ingredients until you obtain a homogeneous texture. Form 13 patties of approximately ¼ cup.
- Preheat the air fryer to 350°F. Using a kitchen brush, lightly brush each side of the patties with olive oil. Cook in the air fryer for 10 minutes, turning them halfway through cooking. Eat the patties with a yogurt and lime sauce or in a tortilla with vegetables and a sauce of your choice.
*Notes: You can substitute the breadcrumbs with 2 ½ cups of puffed rice such as Rice Krispies. Puffed rice is a less salty alternative to breadcrumbs.
Tip: To form the patties more easily, lightly wet your hands. The dough will be easier to handle.
