Orange, peach & coconut energizing oatcakes

Delicious, moist, fruity oatcakes made with our juicy canned peaches. These energizing oatcakes give a real boost of energy. They are therefore a great snack to bring with you during your outdoor activities!

Sliced peaches packed in water no sugar added

Ingredients

Dry ingredients :

  • 360 g (4 cups) quick cooking oats
  • 224 g (2 cups) all purpose flour
  • 30 g (1/4 cup) ground flax seed
  • 5 ml (1 tsp) baking soda
  • 1 pinch of salt

Wet ingredients :

  • 2 eggs
  • 125 ml (1/2 cup) brown sugar (or sugar)
  • 187 ml (3/4 cup) orange juice
  • 80 ml (1/3 cup) canola oil
  • 5 ml (1 tsp) vanilla extract
  • 80 ml (1/3 cup) shredded coconut
  • 1 Del Monte can 398 ml sliced peaches, drained and cut into small pieces

Preparation

  1. Preheat oven to 350°F. Line two baking sheets with a baking mat or parchment paper.
  2. In a bowl, mix the dry ingredients.
  3. In a second bowl, whisk the eggs with the brown sugar. Add the rest of the wet ingredients and mix well.
  4. Add the dry ingredients to the wet ingredients and mix with a fork. Add the coconut and peaches and mix well.
  5. Portion 16 oatcakes onto the baking sheets. Flatten the oatcakes with your fingers and give them a nice round shape. Cook for 20 to 25 minutes. Leave to cool.
