Orange, peach & coconut energizing oatcakes
Delicious, moist, fruity oatcakes made with our juicy canned peaches. These energizing oatcakes give a real boost of energy. They are therefore a great snack to bring with you during your outdoor activities!
Ingredients
Dry ingredients :
- 360 g (4 cups) quick cooking oats
- 224 g (2 cups) all purpose flour
- 30 g (1/4 cup) ground flax seed
- 5 ml (1 tsp) baking soda
- 1 pinch of salt
Wet ingredients :
- 2 eggs
- 125 ml (1/2 cup) brown sugar (or sugar)
- 187 ml (3/4 cup) orange juice
- 80 ml (1/3 cup) canola oil
- 5 ml (1 tsp) vanilla extract
- 80 ml (1/3 cup) shredded coconut

1 Del Monte can 398 ml sliced peaches, drained and cut into small pieces
Preparation
- Preheat oven to 350°F. Line two baking sheets with a baking mat or parchment paper.
- In a bowl, mix the dry ingredients.
- In a second bowl, whisk the eggs with the brown sugar. Add the rest of the wet ingredients and mix well.
- Add the dry ingredients to the wet ingredients and mix with a fork. Add the coconut and peaches and mix well.
- Portion 16 oatcakes onto the baking sheets. Flatten the oatcakes with your fingers and give them a nice round shape. Cook for 20 to 25 minutes. Leave to cool.
