Peach Halves in 100% fruit juice from concentrate


  • 125 g (3/4 cup) dark chocolate couverture
  • 80 g (1/3 cup) butter
  • 3 eggs
  • 25 g (2 tbsp) sugar
  • 5 ml (1 tsp) baking powder
  • 60 g (1/2 cup) flour
  • 1 Del Monte can (398 ml) Peaches or pears in 100% fruit juice


  1. Melt the chocolate and butter in the microwave or in a bain-marie. Mix well and set aside.
  2. Whisk the eggs with the sugar until the mixture turns white.
  3. Add the flour, baking powder and melted chocolate-butter mixture.
  4. Drain the fruit and cut them into small cubes.
  5. Divide half of the dough into 6 well-buttered ramekins.
  6. Place a large spoonful of diced fruit in the center of each ramekin then cover with the remaining dough.
  7. Cook for 15 minutes in the oven at 350°F (180°C) or 30-45 seconds in the microwave. Serve warm.
