Curried chicken salad with mandarins
This recipe is a delicious, easy meal prep protein to keep on hand in the fridge that can be made into wraps, sandwiches, lettuce wraps for a light meal or used as a protein to top green salads. Made with a simple dressing with mayo, greek yogurt, lemon juice and curry powder, it’s a super tasty recipe that all the family will love.
Ingredients
- 60 ml (¼ cup) mayonnaise
- 60 ml (¼ cup) Greek yogurt
- 15 ml (1 tbsp) lemon juice
- 10 ml (2 tsp) curry powder
- 2.5 ml (½ tsp) kosher salt (or to taste)
- 1 stalk celery, chopped
- ¼ red onion, minced
- 500 ml (2 cups) cooked chicken
- 2 Del Monte Mandarin orange segments portable fruit cups

60 ml (¼ cup) almond slivers or cashews, toasted and chopped
Preparation
- In a large bowl, whisk together mayonnaise, Greek yogurt, lemon juice, curry powder, and salt.
- Add chopped celery and minced red onion to the bowl; mix well.
- Stir in cooked chicken, drained mandarin oranges from Del Monte fruit cups, and toasted almond slivers or chopped cashews.
- Toss everything until well combined and evenly coated with the dressing.
- Serve as desired, either on its own, as a sandwich filling, or over a bed of greens.
