
Vegan Ceviche
Prepared with:
Citrus blend in slightly sweetened water
Ingredients
2 avocados, cubed
1/3 cup finely chopped red onion
1 jalapeno pepper, finely chopped
1/3 cup fresh cilantro leaves, tightly packed, finely chopped
1 can (14 oz/400 g) hearts of palm, sliced
1 jar Del Monte Citrus Salad, strained
1 lime, juiced
2 tablespoons olive oil
¼ tsp fine sea salt
tortilla chips, for serving
Preparation
In a medium bowl, combine the avocados, red onion, jalapeno, cilantro, hearts of palm and citrus fruits. Pour in the lime juice, olive oil and sea salt and gently toss with a spatula to combine. Pour into a serving bowl and serve with tortilla chips for dipping!
