
Thai carrot salad
Prepared with:
Shredded Carrots
Ingredients
2 cans Del Monte shredded carrots
3 tbsp (45 ml) lime juice
1/2 to 1 tsp (2 to 5 ml) lime zest
1 tbsp (15 ml) honey
1 tbsp (15 ml) toasted sesame oil
1 tbsp (15 ml) canola oil
1 hot pepper, minced
1/2 c (125 ml) salted cashews, coarsely chopped
2 tbsp (30 ml) freshly chopped cilantro
salt
Preparation
- In a bowl, mix together all ingredients. Toss and season with salt, if needed.
- Serve as a side.
