Sliced Peaches in 100% fruit juice from concentrate

Ingredients

  • 2 cans Del Monte Peach Slices, drained well and peaches patted dry
  • 180 g (1 1/2 cups) all purpose flour
  • 76 g (1/3 cup) unsalted butter, at room temperature
  • 90 g (1/2 cup) brown sugar
  • 2 large eggs
  • 5 ml (1 tsp) pure vanilla extract
  • 80 ml (1/3 cup) whole milk
  • 2.5 ml (1/2 tsp.) baking powder
  • 2.5 ml (1/2 tsp.) baking soda
  • 5 ml (1 tsp.) salt

For the Glaze:

  • 57.5 g (1/2 cup) powdered sugar
  • 20 ml (4 tsp.) whole milk
  • 5 ml (1 tsp.) pure vanilla extract

Preparation

  1. Preheat oven to 176°C (350°F). Grease a loaf pan with butter, ensuring it’s completely and evenly coated.  
  2. Open and drain cans of Del Monte Peach Slices. Pat peach slices really well with paper towel to remove  all excess liquid. Cut peaches into smaller cubes.  
  3. In a large bowl, cream together the butter and brown sugar with a hand mixer. Add one egg at a time  and beat until combined. Add whole milk and pure vanilla extract and beat until combined. Add in peach pieces and use a spatula to gently fold into the mixture. 
  4. Add flour, baking powder, baking soda, and salt. Fold together to combine with spatula. 
  5. Transfer mixture to the loaf pan. Sprinkle with a generous amount of additional brown sugar. Bake for  55 minutes or until a toothpick inserted into the centre comes out clean.  
  6. Let cool on a rack for at least 30 mins to an hour. Do not attempt to slice while still warm. Top with glaze  and cut when ready to enjoy!
