Ingredients
- 2 cans Del Monte Peach Slices, drained well and peaches patted dry
- 180 g (1 1/2 cups) all purpose flour
- 76 g (1/3 cup) unsalted butter, at room temperature
- 90 g (1/2 cup) brown sugar
- 2 large eggs
- 5 ml (1 tsp) pure vanilla extract
- 80 ml (1/3 cup) whole milk
- 2.5 ml (1/2 tsp.) baking powder
- 2.5 ml (1/2 tsp.) baking soda
- 5 ml (1 tsp.) salt
For the Glaze:
- 57.5 g (1/2 cup) powdered sugar
- 20 ml (4 tsp.) whole milk

5 ml (1 tsp.) pure vanilla extract
Preparation
- Preheat oven to 176°C (350°F). Grease a loaf pan with butter, ensuring it’s completely and evenly coated.
- Open and drain cans of Del Monte Peach Slices. Pat peach slices really well with paper towel to remove all excess liquid. Cut peaches into smaller cubes.
- In a large bowl, cream together the butter and brown sugar with a hand mixer. Add one egg at a time and beat until combined. Add whole milk and pure vanilla extract and beat until combined. Add in peach pieces and use a spatula to gently fold into the mixture.
- Add flour, baking powder, baking soda, and salt. Fold together to combine with spatula.
- Transfer mixture to the loaf pan. Sprinkle with a generous amount of additional brown sugar. Bake for 55 minutes or until a toothpick inserted into the centre comes out clean.
- Let cool on a rack for at least 30 mins to an hour. Do not attempt to slice while still warm. Top with glaze and cut when ready to enjoy!
