Del Monte Peach Sauce – Inspired by Sookie’s recipe from Gilmore Girls

Ingredients
1 Del Monte can 398 ml sliced peaches, partially strained
62.5 ml (1/4 cup) maple syrup
The juice of half a lemon
1 cinnamon stick
15 ml (1 tbsp) vanilla extract
Preparation
1. Add all ingredients to a small pot.
2. Cover and simmer for about 30 minutes, stirring occasionally to prevent sticking.
3. Serve with your favorite pancake recipe, over a portion of vanilla ice cream, in yogurt, or even on toast or small biscottis. Enjoy!
